Need a new dinner idea for February?

If you live anywhere in South Central Pennsylvania and have not tried Isaac’s Restaurant and Deli’s Pepperjack Tomato soup then you don’t know what you’ve been missing.  Let me be clear.  I hate tomato soup, but this stuff is “da bomb“.

That being said, I’ve been scouring the internet for a similar recipe so that I can make the soup at home.  I’ve tried three times and failed twice.  Third times a charm.  The recipe that is attached comes from and was provided by Grace Zubrod. It is a fantastic duplication of Isaac’s recipe.

Thus begins, my dinner planning for February.  February is a super busy month for my family plus we’ve got Superbowl Sunday, Valentine’s Day, Faschnaut day and Lent to add into the mix.  And my sister, who I haven’t seen in two years, is coming to visit with her family for a week at the end of the month.  Which equals more mouths to feed.

This month, I’m going to try four new recipes: Koshari, Cataplana, Dutch Babies, and Slow Cooker Red Beans and Rice.  My husband has a theory the longer the name of a recipe the more he’s going to hate it. (Guess, I’m going to be a smart butt this month and use 1-2 word name recipes.)

What are all of these things:

Koshari is a vegetarian Egyptian Dish of rice, lentils, chickpeas and macaroni and is usually topped with a tomato or garlic sauce.  I’ve found a recipe that is a lighter version.

Cataplana is a seafood dish that hails from Southern Portugal.  It is called cataplana because of the dish in-which it is served.  All I know is it is delicious.  (This recipe is takes longer than 30 minutes, but it is well worth the time and effort.)

Dutch Baby is a pancake of German origin. It is made with eggs, flour and milk, and usually seasoned with vanilla and cinnamon.  I’m going to serve this on Faschnaut day in place of eating a Faschnaut.

Slow Cooker Red Beans and Rice is exactly what it says.  I just haven’t tried making it in a slow cooker.
