There are some dishes I get a craving for once in a while. One of those is baked mac and cheese. And it doesn’t matter what I’m making it with, Will, my boyfriend, always makes that face — the one I know where he approves — when he puckers out his lips and says a long “Oh,” before running out of the room to watch baseball or set his fantasy line up while I finish cooking.
The last few times I made baked mac and cheese I struggled to find the right mixture of cheeses to keep it moist enough that it wouldn’t dry out while it was baking. I think I finally found something that works.
