Of Pots and Pens: Sauteed spinach with garlic and bacon

Eating healthy happens slowly for us. Yes, we want chicken nuggets. But we also want salad. And turkey bacon.

So we made some compromises earlier this week when we wanted to try something tasty, but healthy and flavorful.

My boyfriend, Will, loves his greens. I’m never got too keen on the idea of cooked, leafy greens, but I know it’s something that he had growing up. Combine his Italian background and eastern Ohio roots, and somehow you get greens.

I like a good bowl of chicken and dumplings. He gets cravings for greens.

At least one of us can be skinny in our old age.
