Of Pots and Pens: Oat and parmesan crusted chicken

I woke up one morning last week and my right eye was practically swollen shut. I laid on my pillow with the right side of my face smashed in to it so the sunlight wouldn’t make it burn right out of the socket.

After a trip to the eye doctor, he confirmed I had an abrasion on my cornea. Yep. Contacts. The evil of all vanity.

Some steroid eye drops and a few days with my glasses and I was feeling as good as Lance Armstrong when he fake won those Tour de France races. My sister insists Armstrong wasn’t taking steroids through his eyes, but will we ever really know? Probably not.

A trip back to the eye doctor this morning proved the miracle medicine worked and I’m back to normal. Huzzah!

To celebrate, I made these healthy, crispy, crunchy coated chicken strips. All you need is a food processor. You probably have all the other ingredients on hand.
