Of Pots and Pens: Black bean and sweet potato enchiladas

I know what you’re thinking. I have a crazy obsession with beans.

OK. So what if I do? What are you going to do about it?

I’m not making YOU eat beans every day of the week. Just Will….

But he likes beans. So it’s OK.

I decided to cook these up when ground beef/turkey/anything was more than I wanted to pay at the grocery store this week. So I found this recipe and yeah, it’s vegetarian. I can’t say I’ve ever made a vegetarian dish before unless it was a soup or a salad. And I don’t think that really counts as a vegetarian meal because it doesn’t require intentionally leaving out meat. It just kind of works that way.

So while I was cooking up my bean and sweet potato mixture and whisking enchilada sauce, Will was sneaking up behind me in the kitchen. He was a little bored because we recently canceled cable and his MLB subscription blocks out local games. So no Orioles. And he was probably going to be bored out of his mind for the next six hours until he went to work.

But he told me dinner smelled delicious. He hadn’t even looked at it.

Just simply, “That smells delicious.”

Nice. I thought for sure I had him in this sneaky vegetarian dish. He won’t know until he bites into it, I thought.

Then he got closer. Of course, of course, OF COURSE he had to taste it.

“Where’s the meat?”

I just smiled. One of those really big, awkward, all my teeth are showing smiles. And I kept pouring enchilada sauce over the rolled tortillas.

“I think you forgot the meat.”

Kept smiling.

“Were you just going to wait until I ate it?”

There. He had figured me out.

“Here. Close your eyes,” I said, holding up a sloppy spoonful of beans. “Taste this ‘beef.’”

He tasted. He liked it. He’ll have to get over the fact that there wasn’t any meat.
